INGREDIENTS

2 tb Olive oil
2 Cloves garlic; crushed
2 Plum tomatoes; skinned and finely
; chopped
1 Lemon; Juice and rind of
1 pk Crabsticks; defrosted and
; shredded
250 g Linguine; cooked and drained
15 g Flat leaf parsley; finely chopped
Salt and freshly ground black pepper

INSTRUCTIONS

Heat the oil in a frying pan or wok, add the crushed garlic, stir-fry
for 1 minute.
Add tomatoes and lemon rind to the pan and cook for a further 3-4
minutes.
Add the crabsticks and heat through.
Toss in the linguine, parsley and seasoning. Spoon into a heated
serving dish.
Pour over lemon juice and serve.
Notes Delicious served with ciabatta bread and herb salad.
