So...recipe that never fails: 2 cups rye or amaranth or any other kind of flour except wheat; 1 cup unsifted wheat flour (white or whole); 1/2 t. salt, 1 t. baking powder, 1/2 cup grated cheese, sprinkle of garlic powder, handful of chopped chives (these last 2 are optional), and 6 T. butter which you cut in with a pastry cutter or a fork and knife until it all has the consistency of cornmeal. Then you add 3/4 cup milk and 1 beaten egg. Mix, roll out thin - and I do mean paper thin, not cracker-thin, the stuff will swell - and cut it into 1" squares and bake. Be warned that this will take up several baking sheets that you may have to rotate. One small lump of dough goes a long way when rolled paper'thin. They also only take about 10 minutes or less to bake -at around 350 or so. I have a wood cookstove so I just throw them in and hope for the best.
