Coveting is nothing more or less than an attempt to improve upon God. The covetous man moans and groans because he believes that he has been treated unfairly. When all the goodies were passed out, he got nothing but crumbs... The covetous man doubts God’s wisdom, God’s goodness, God’s justice, God’s timing and ultimately God’s love. Coveting is a terrible sin because it is a surreptitious attack on God Himself. Those who covet are saying, “God, you haven’t taken care of me.” They are blaming God for His failure to meet their needs.

INGREDIENTS

1	c	Honey
3	tb	Orange juice
1	ts	Salt
1/3	c	Soy oil
1	pk	(10.5-oz) firm silken tofu
1		Egg
1	ts	Vanilla
2	c	Flour
1	ts	Baking soda
1	ts	Cinnamon
2	c	Peeled apple slices
2 1/2	c	Cranberries (fresh or frozen)
1/2	c	Chopped walnuts

INSTRUCTIONS

Preheat oven to 350 degrees. Spray a 10 x 15 x 1 inch pan with non-stick
spray. Whip honey, orange juice and salt together; then blend with oil.
Add tofu, vanilla, egg, and beat well. Sift together flour, baking soda
and cinnamon. Add to the honey/oil mixture and stir well. Fold in
apples, cranberries and nuts. Pour batter into prepared pan. Bake for 30
to 35 minutes or until a toothpick inserted near the center comes out
clean. Yields 24 to 36 bars. Sprinkle with powdered sugar.
Tip: May substitute 2 1/2 cups fresh blueberries for cranberries.
