INGREDIENTS

1 | c | Cranberries, chopped |
1 | c | Carrots, shredded |
2 | Egg whites, whipped | |
1/2 | c | Applesauce |
2 1/2 | c | Unbleached flour |
1 1/3 | c | Granulated sugar |
1 | T | Baking powder |
2 | t | Baking soda |
1/2 | t | Salt |
2 | t | Cinnamon |
INSTRUCTIONS
Preheat oven at 350. Prepare pan(s) with cooking spray and flour. In a mixing bowl, combine apples, cranberries carrots, egg whites, and applesauce. In another mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Fill prepared pan(s) 2/3 full. Bake for 20 to 25 minutes depending on pan size.
