Cranberry-Apple Tart

INGREDIENTS

3 c Ralston(r) brand fruit & nut muesli with cranberries; crushed to 2 cups
1/4 c (1/2 stick) margarine or butter; melted
1/4 c Packed brown sugar
2 c Cranberries; fresh or frozen
1/2 c Sugar
1/2 c Water
1 tb Lemon juice
1 cn (20 oz.) apple pie filling
Shredded cheese optional
Mint leaves optional

INSTRUCTIONS

CRUST
FILLING
To prepare crust, preheat oven to 350 degrees F. In medium bowl combine
cereal, margarine and brown sugar. Press cereal mixture firmly into 9-inch
fluted tart pan or 9-inch pie plate. Bake 7 to 8 minutes or until lightly
browned. Cool completely.
To prepare filling, in medium saucepan over medium heat combine
cranberries, sugar, water and lemon juice. Cook, stirring frequently, until
mixture comes to a boil; reduce heat and simmer 15 to 18 minutes, stirring
frequently. Remove from heat and cool completely. Pour apple pie filling
into cooled crust; top with cooled cranberry mixture. Garnish with cheese
and mint if desired.
