INGREDIENTS

1 c Applesauce, at room
Temperature
3 Egg whites, whipped
1 1/2 c Fat-free sour cream
3/4 c Cranberries, chopped
1 t Vanilla
2 1/2 c Unbleached flour
1 1/2 c Granulated sugar
1 1/2 t Baking powder
1 1/2 t Baking soda
1/4 t Salt
1/4 t Nutmeg
1/2 c Raisins
1/3 c Apricots, dried/chopped

INSTRUCTIONS

Preheat oven at 350.  Prepare a pan(s) with cooking spray and flour.
In a mixing bowl, combine applesauce, egg whites, sour cream,
cranberries, and vanilla.  In another mixing bowl, combine flour,
sugar, baking powder, baking soda, salt, nutmeg, raisins, and
apricots.  Mix wet ingredients with dry ingredients just until
moistened.  Pour into prepared pan(s). Bake about 1 hour depending on
