Cranberry Waffles And Orange Sauce

INGREDIENTS

2 c Buttermilk biscuit mix
1/4 c Sugar
3 Eggs, beaten
1 1/2 c Milk
3 T Shortening, melted
1 c Cranberries, raw ground
1/2 c Sugar
2 T Cornstarch
1 t Salt
1 1/2 c Water, boiling
1 T Butter, or marg.
1 T Orange rind, grated
1/2 c Orange juice
1 T Lemon juice

INSTRUCTIONS

Combine biscuit mix and sugar; stir in eggs and milk.  Add melted
shortening, mixing well; fold in cranberries.  Bake in a preheated
waffle baker, and serve with Orange sauce.  Orange Sauce: Combine
sugar, cornstarch, and salt; add to boiling  water. Cook 3 minutes,
stirring constantly. Remove from heat; stir in  butter orange rind,
orange juice, and lemon juice. Yield: about 2  cups.  SOURCE: Southern
