This recipe came with my great-great Grandmother when she left Germany to
settle in Nebraska. The women in my family have been making these for
generations.
Peel the cucumber and drag a fork down them lengthwise, creating a fluted
edge when sliced. Slice these extremely thinly. Place in a bowl and cover
with table salt. Place a tray of ice cubes into the bowl and toss well with
your hands. Place the bowl in the refrigerator and let the ice cubes melt.
With your hands, squeeze the cucumbers to remove the water and place them
into a separate bowl. Dice the onions finely and stir them into the
cucumbers. Stir in the mayonnaise, vinegar, and sugar. Play with the sauce
ingredients until you reach a taste that you like.
*We serve this as a side dish in our family's favorite meal, "The Nebraska
Supper"...fried chicken, mashed potatoes and gravy and corn on the cob.
