Creamed Dried Beef

INGREDIENTS

1/4 lb Dried beef
1/4 c Butter or margarine
3 tb Flour
2 c Milk; or
1 c Evaporated milk plus
1 c Water
1 ts A-1 Sauce; (optional)

INSTRUCTIONS

Tear dried beef into medium pieces; then prepare by pouring boiling water
over beef; let stand one minute; then drain or use beef right from package
or jar if you prefer a full flavor.
In double-boiler top over direct heat, melt butter. Add dried beef; cook
until edges curl. Stir in flour. Place over boiling water. Add milk slowly,
stirring. Cook, stirring, until smooth and thickened. Add meat sauce. Serve
on toast, small baked potatoes, waffles, fluffy white rice, or split hot
baking powder biscuits. Or serve over baked or broiled tomatoes, or over
hot whole hard-cooked eggs on toast.
TO VARY: If desired, simmer 1/4 cup minced onion and 2 tb. minced green
pepper in butter. Or add 1 chopped, hard-cooked egg to sauce.
WITH MUSHROOMS: Add 1/4 lb. sauteed, sliced fresh mushrooms to sauce.
CURRIED: add 1/4 to 1/2 tsp. curry powder to sauce.
