INSTRUCTIONS
The recipe is exactly what you think it is. Cooked hominy is warmed in a
good cream sauce and served over hot toast. I like lots of black pepper on
mine and I serve it over a toasted English muffin. Terrific!
HINT: ON CREAM SAUCE IN THE MICROWAVE. Cream sauce in your microwave is
easy. Use the ingredients for Creamed Chipped Beef on Toast, omitting the
beef. In a 1-quart glass mixing bowl, heat the butter at medium-high
setting for 1-1/2 minutes. Add the chopped onions and cook for 30 seconds
more at the same temperature setting. Add the flour and mix to form a paste
or roux. Cook at medium for 1 minute. Add the milk and blend thoroughly
with a wire whip. Add the paprika, pepper, and Tabasco. Blend again and
return to microwave for an additional 6 minutes at medium-high setting.
Whip once more halfway through the final cooking process. Repeat this if
necessary until the sauce is thickened and hot. Stir in the sherry. Taste
for salt.
