Creamy Artichoke Sauce

INGREDIENTS

General
1 285 gram jar Antipasti Carciofini; (sliced artichoke
; hearts in seasoned
; oil) (91/2oz)
25 g Butter; (1oz)
1 sm Onion; sliced
1 142 millilit soured cream; (1/4 pint)
150 g Cottage cheese; (5oz)
1 tb Shredded fresh basil
1 tb Chopped fresh chives
A pinch of Cayenne pepper
Salt and pepper
Fresh chives

INSTRUCTIONS

TO GARNISH
1. Drain the oil from the artichokes and reserve.
2. Roughly chop the artichokes.
3. Heat the reserved artichoke liquid and the butter in a frying pan.
4. Add the onions and cook for about 5 minutes until softened.
5. Add the chopped artichokes and heat through for about 3 minutes.
6. Reduce the heat and stir in the remaining ingredients, mixing well.
7. Remove the pan from the heat.
8. Toss the sauce with freshly cooked pasta and garnish with chives.
