Creamy Mashed Potatoes

INGREDIENTS

2 lb Potatoes
1/2 c Plain yogurt
1/2 c Sour cream
1/2 c Ricotta cheese
3 tb Butter
2 ts Paprika
1 ts Garlic powder
Salt & black pepper
Chopped fresh chives

INSTRUCTIONS

Put potatoes in saucepan of water, cover & bring to boil. Reduce heat.
Uncover & cook about until potatoes are tender. Drain & return
potatoes to pan. With electric mixer beat together yogurt, sour
cream, ricotta, butter & paprika until smooth. Beat yogurt mixture
into potatoes. Add garlic powder, salt & pepper. Beat until smooth.
Stir in chives & serve.
Approximately 10-12 minutes.

Protein; 141g Carbohydrate; 220mg Cholesterol; 608mg Sodium
