ROASTED ASPARAGUS

Spread asparagus in a single layer in a Pyrex pan.  Drizzle with light olive oil and coarse salt (I use Morton's Kosher) and bake at 475º for about 10 minutes.  Delicious!! 
(Note from Lois: I made this last night on a bar pan and it was delicious, as Becky says!  Cold leftover asparagus is also good on a relish plate served with baby carrots, celery sticks, pickles and olives on green lettuce.  Either way would be an easy addition to your Easter Sunday dinner.)
 
 

ASPARAGUS BACON QUICHE

1 (9 inch) unbaked pastry shell                     
1 lb. fresh asparagus, cut into 1" pieces     
6 strips bacon, cooked and crumbled         
3 eggs                                                            
1 cup shredded Swiss cheese                     
1 1/2 cups Half and Half                                                                          
1 Tbs. sliced green onions
1 tsp sugar
1/2 tsp. salt
1/4 tsp. pepper
pinch of nutmeg
 
Line unbaked pastry shell with a double layer of heavy duty foil.  Bake at 450º for 5 minutes; remove foil and bake 5 minutes more.  Remove from oven and set aside.  Cook asparagus in a small amount of water until crisp-tender, about 3-4 minutes. Drain well. Arrange asparagus and bacon in the crust. Beat eggs; add cream, 1/2 cup cheese, onions, sugar, salt, pepper, and nutmeg. Pour over asparagus. Sprinkle with remaining cheese. Bake at 400º for 10 minutes. Reduce heat to 350º for 20-25 minutes longer or until knife inserted in center comes out clean.  Makes 6-8 servings.

 
FABULOUS FRENCH ONION SOUP

A slow cooker recipe that equals the onion soup in fancy restaurants and smells great as it cooks.  You may substitute beef bouillon cubes according to directions in place of broth.
 
6 large onions, chopped                                                3 bay leaves
1/2 cup butter                                                                  10 slices French bread, toasted
60 - 65 ounces condensed beef broth, undiluted        Shredded mozzarella cheese
1 1/2 tsp. Worcestershire sauce                                   Shredded parmesan cheese
 
In a large skillet, saute onions in butter until crisp-tender.  Transfer to an ungreased 5 quart (or larger) slow cooker. (I only had a 4 quart, so made the leftover soup in a regular stove-top pot.) Add broth, Worcestershire, and bay leaves. Cover and cook on low for 5 to 7 hours or until the onions are tender. Discard the bay leaves. Top each serving with French bread and cheeses.

ONE HOUR DINNER ROLLS
Note: Using bulk yeast is a huge savings and keeps very well in the freezer.  One package of active dry yeast from the grocery store is equal to 1 tablespoon when using bulk yeast from a natural foods co-op. 
 
1 pkg. active dry yeast  (1 Tbsp. if using bulk yeast from a natural foods co-op)
3/4 cup warm water (110-115 º)
2 cups unbleached flour  (You may want to substitute whole wheat flour for 1/2 cup)
1/2 tsp. salt
3 Tbsp. sugar
2 Tbsp. shortening

In a small bowl, dissolve yeast in warm water.  In a large bowl combine dry ingredients and cut
in shortening with pastry blender or a fork until shortening is blended into small bits. Add yeast mixture and mix well.  Turn onto floured surface and knead 3 or 4 times.  Roll out to 3/4 to 1-inch thickness.  Cut with biscuit cutter.  Place on greased baking sheet and let rise about 45 minutes.  Bake at 450 º for about 12 minutes or until golden brown.  Yields 6 to 8 rolls.

 
 
BATTER BUNS
From Betty Crocker's New Dinner for Two Cookbook ~ Quick, easy and delicious recipe!
 
2/3 cup warm water (not hot - 100 to 115 º)
1 pgk. active dry yeast (or 1 Tbsp. bulk yeast)
2 Tbsp. sugar
1/2 tsp. salt
1/4 cup shortening
1 egg
1 2/3 cup flour
 
Measure water into mixer bowl.  Add yeast, stirring to dissolve.  Measure flour, sugar, salt, shortening, egg, and 1 cup of flour.  Beat on low or use wire whisk.  Add remaining flour.  Beat with rubber spatula until smooth.  Spoon into greased muffin cups, filling each a scant 1/2 full.  Let rise in warm place (85º) until batter reaches top of muffin cups (30-40 minutes).  Heat oven to 375º and bake 18-20 minutes, until golden brown.  Serve warm.  Makes about 12 buns.
 
 
HAWAIIAN CHICKEN SALAD
4 chicken breasts                        1 lb. red grapes
1 apple                                         1 cup pineapple juice
1 can pineapple chunks              2 Tbsp. mayonnaise

Grill, fry or boil chicken breasts until tender, seasoning with onion salt and pepper.  Remove skin and cut in small cubes.  Cut apple into small slices and cut grapes in half. Add drained pineapple, setting aside the juice. Mix all the above ingredients together well.  For the dressing, thoroughly mix the pineapple juice and mayonnaise. Add to salad, mix together and refrigerate.

 
 
RAINBOW RIBBONS ~ A FOOD ACTIVITY FOR CHILDREN

Clean and cut fruit and place in separate bowls if you want the kids to make their own Rainbow Ribbons.  Place fruit on skewers in order listed to make a rainbow.
Assorted fruit in the colors of the rainbow:
        Red - watermelon balls, strawberries, or cherries
        Orange - orange sections, cantaloupe balls, mango, or papaya
        Yellow - pineapple cubes or banana slices
        Green - green grapes, honeydew melon balls, or kiwi fruit slices
        Blue - large whole blueberries
        Purple - purple grapes or cubed plums

Custom Coffees ~ I love cappuccino and latte and saving money! I got an air whipper (it's a wand that weighs about four ounces, specifically for coffee) at a housewares store for $15,
including two double-A batteries. I put 1/3 cup non-fat milk in a cup and whip it for a few seconds. Then I add my coffee and sprinkle cinnamon on top. It has much more froth than any
coffee shop or restaurant latte and stays whipped for over 20 minutes. Much better than Starbucks! ~ Marcy
 
Clean Your Iron ~ To remove starch from your iron, sprinkle salt on a sheet of waxed paper and slide back and forth several times. Then polish with silver polish until stains and roughness are removed.
 
From Dryer to Shower ~ To successfully clean soap scum from the shower, wet dryer
sheets and wipe the area with them. At first, this creates a sort of gel/soapy fluid, but when you rinse with water, presto! Soap scum is gone! It's super easy and there are no harmful chemical fumes. In fact, it smells great! ~ Mary D.
 
No Chemicals Here! ~ I have been living in my house for 28 years and have never used any chemicals to clean the shower stall and glass enclosure. Why? Because I take a couple of minutes to wipe down the shower walls and the glass doors after I take a shower. I have never had a spot of mold or mildew and my children now do the same thing in their houses. ~ PSC
Second Opinion Saves ~ The rear heater in our van recently stopped working, so we took it to the dealer where we bought the van and have always done repairs, service work, etc. They charged us $70 to diagnose the problem (rear blower motor needs to be replaced) and gave us an estimate of $268 to replace it.  We knew a guy in our church and asked him to look at it.
Within one hour, he had the blower motor working fine. The problem was a small connection on the circuit board and the cost was 99 cents! We paid him for his labor and thanked him profusely!  So, always get a second opinion when it comes to car repairs, especially expensive ones. I found the guy just by asking around in church and then checked some references. I just
wonder what the car dealer did to diagnose the problem! ~ Joanne T.
 
Natural Diaper Rash Help ~ My baby is allergic to many of the commercial ointments available, so when she gets diaper rash, it can be hard to clear up. I've found that using olive oil at every changing really helps to keep diaper rash at bay, as well as clearing it up fairly quickly when she does get it. The bottle of olive oil also lasts quite a long time. ~ GP

Of Socks and 'Launch Pads' ~ My kids play sock sorting games to help with the laundry. We
each have a basket of mixed socks. Whoever makes the most pairs wins. If they can't make a match, I say "go fish" and they take one from my basket. They don't need a prize. They just like beating me. Oh, they win every time! Wink!   I took a small closet near our back door and turned it into a "Launch Pad." The kids have low hooks to hang their coats and backpacks. I installed low shelves near the floor for slippers, boots and shoes. An afterthought that worked out great was to move their socks to a small basket above the hooks. Now when I tell them to put their shoes and socks on, they literally go to one place to find them. Since both my children are still young, I still have upper shelves to utilize for other storage needs. I was unsure at first about
losing the storage space, but it has been worth every inch.  Now because it's so easy to reach and "hook," they come in from school and put everything away, and we can find everything in the morning! ~ T N
 
Write Again
~ I have always bought my kids learning books about shapes, colors, etc. As they have gotten a little older, we now have the ones that show how to make letters and ask the child to fill the right word in the sentence. Those books can get very expensive when you have to buy several of the same thing for each child. So, I came up with a solution.   I bought sheet  protectors that have a little texture. Then, I tore out the pages and put them in the protectors and then into a three-ring binder. I then bought dry erasable markers in several different colors. The kids like writing in them better than they did in the actual book. We also have one for our road trips. It has mazes and games in it. The kids have a great time with them. I now have several books so they never really tire of them. I put the markers in a little plastic tub. I then put the tub and the note books in a carrying bag.  Now, everything is always together and we can take it with us when we are going on a road trip. You can use paper towels to erase or buy an eraser. ~ Rhonda in Brighton, IA  

Back Seat Etiquette ~ We used a great technique this past summer while on a trip to Disney World. I have two eight-year-olds and a seven-year-old and the trip required them to sit next to each other in the backseat for eight hours one day and six hours the next. We took a pad of paper and made a column for each child. For every hour that I did not have to tell them to stop fighting or keep it down, they got a dollar. Every time I had to call them down, I took away a dollar. If they tattled on someone, they lost a dollar and so did the person they tattled on. It was amazing how fast they learned to get along on that trip! And by the time we got there, I had set aside between $25 and $30 dollars of spending money for each. Well worth every penny! ~

18 WAYS TO REUSE EGG CARTONS

Here are some easy, effective uses for those empty egg cartons. Before throwing them away, check out these simple ideas.

Money Container - Use old egg cartons to store your change for garage and yard sales. Egg cartons are good for this because you can separate all the change and it is easy to get to.

Golf Ball Storage - What a great place to store extra golf balls. Easy to sort by brand and condition and they are stackable so they can be stored neatly.

Travel Helper - Use them to hold small items like earrings, necklaces, sewing notions, etc; weave needle thru the inside top cover so as not to lose it in your suitcase. Hold it together with a large rubber band.

Waste Paper Basket - Make wastebaskets from egg cartons. Cut off tops. Then poke holes on the flap that is used to close the carton. Then take ribbon and tie each carton to the next. Takes 8 cartons to make a circle. The plastic bags from Wal-Mart or the grocery store fit into these nicely. Makes a great waste paper basket.

Craft Helping Hand - When working with small round items, use an egg carton to hold the item while you paint one side, or just as a holder while they dry. It keeps those little round things from rolling away.

Fire Starters - Fill the paper egg cartons with dryer lint, and then pour melted wax over the lint. You can tear apart the sections and use for fire starters when you are camping, or in your fireplace. Use leftover candle pieces for the melted wax.  (Note from Lois: Use only cardboard egg cartons for burning - never Styrofoam cartons, because of the fumes from burning Styrofoam.)

Charcoal Fire Starter - Using a cardboard egg carton, fill each section with melted wax so that it's about 1/3 full. Place a piece of charcoal (one briquette) in the wax. Close the carton and place on a shelf until you're ready to use. To use, remove the top of the carton, and place the bottom half in the grill. Light the carton. Wait a few minutes and then add more charcoal. This will eliminate the need for lighter fluid.

Candles - Make scented candles. Melt wax in a double boiler. Add scents (from a candle shop) and old crayons for color. Put the wick in the bottom of each egg cup. Tie on a small washer to keep it on the bottom. Pour in the wax, holding up the wick. After wax has set, remove the eggcup.

Plant Containers or Seed Starters - Poke a few holes in the bottom for drainage. Fill about 3/4 with potting soil and vermiculite. Plant seeds and set in a sunny window.

Jewelry Organizer - Paint or cover with fabric. Store any small pieces of jewelry, rings, earrings, chains, cuff links, etc.

Desk Organizer - Remove the top and place inside a desk drawer to hold small items, like paper clips, rubber bands, push pins, etc. Paint or decorate if you want to place it on a desktop where it will be seen.

Christmas Decoration Storage - Line cups with cotton, foam, or tissue paper and store small Christmas tree bulbs and ornaments in each cup.

Palette - Use the Styrofoam kind for watercolor or acrylic paints. Detach top of carton and use for mixing colors.

Craft Storage - Is your craftwork area a nightmare? Use an egg carton to store all those little pieces you don't want to lose track of while you're working.

Cheap Ice Cube Trays - Use plastic egg cartons to make extra ice.

Game or Toy Storage - Does it drive you crazy when those little pieces keep getting lost? Use a carton to store doll shoes, game pieces, dice, Lego, etc

Ball Toss - Give number values to each cup in an egg carton bottom - 5, 10, 25, 50 and 100s. Try to achieve your best total score by bouncing three ping-pong balls into the cups.

Packing Material - If you often mail fragile things, simply cut up clean egg cartons to make lightweight packing material to protect the contents of your mailing packages.

Button Storage - Sort out and store different colors of buttons in the egg carton bottoms, after removing the lids.  They stack well too.

Sorting Game - Depending on the size of the egg carton, give a young child a pile of 12 -18 different miscellaneous objects (with more than one of each object) - things that will fit into the egg carton sections for a sorting game. (Examples: safety pins, paper clips, rubber bands, pennies, nickels, dimes, quarters, erasers, buttons, tiny spools of thread, beads, tiny artificial flowers, small sea shells, stones, short pieces of ribbon, odd puzzle pieces, letter magnets, lids to milk jugs).  Teach your child the names and colors of each object.  Caution: If your child is five or younger, be sure to supervise at all times, so these objects don't go down the throat, up the nose, in the ears or around the house!

 

BIBLE SEARCH  ~ Go to Google or Yahoo and type in Bible.  Then type in a word (prayer, love, resurrection, joy, hope, fear, anger, marriage, children, discipline, mother, father, money, and do a BIble word search.  You will be given all the scripture verses where that word is found.
