A WORD OF ENCOURAGEMENT FOR MOMS

I want to commend you ladies for the good job you are doing as a faithful wife, mother, teacher or friend, as well as other ladies who have an influence for the Lord on the next generation.  Remembering back to when my children were all small and active, there were times when I wondered if I would be able to do anything for myself ever again without interruptions.  You all know how that goes!  You may have heard an older mom telling you a few times, "Enjoy those small children, because before you know it, they'll be all grown up!  You blink and they're gone!"


C. Everet Koop said, "Life affords no greater responsibility, no greater privilege, than the raising of the next generation."  I totally agree.  The world may not honor us for our positions, but we can be certain that the Lord does.


We as women have different seasons of life, and looking back, I'd have to say that the season of raising my young children was one of the most exhausting but rewarding times, so be not weary in well doing!  Of course, each season has its advantages and disadvantages, but a good friend taught me how to look at the bright side of every situation - definitely a learning process that many times does not come naturally.  You dear ladies continue to be in my prayers!  We can all benefit by the prayers of others!


PRAYER UPDATES
I am so thrilled to report that my dear friend, Carol, is cancer free, after a very rough fifteen months!  She only had four of the twelve chemo treatments, yet God miraculously removed the tumor!  She does still have surgery ahead of her in the fall, but there is much rejoicing over what God has done!


My niece, Diane, is also cancer free after having surgery, and we thank and praise the Lord for that! 

In the past I asked you to pray for Baby Ruby, the granddaughter of my cousin, as she had a heart transplant soon after birth.  She is now a bouncing two year old, but they are living one day at a time, cherishing the time they have with her.  Although she is not rejecting the heart, she has the heart transplant patient's version of cornonary artery disease.  Please pray for little Ruby and her family.  Thanks so much!


MORE REFERENCES FOR PARENTS AND GRANDPARENTS OF WAYWARD CHILDREN

Many godly Christian parents have loved, disciplined, taught, and parented their children in all the right ways.  They are great Christian parents, and yet their children still rebelled, turning away from the God they had invited into their hearts as young children.  Remember that all children have a will and sometimes they simply allow the enemy to lure them away.  In these last days, I know the devil is really on the rampage, working overtime, "seeking whom he may devour" - seeking to steal the souls of our children.  He knows his time is short!  My husband and I have so many young adults on our prayer list who have strayed from the Lord after leaving home.  It often happens when they attend a secular college, if not sooner. 


Of course, as parents, we there is not one of us who hasn't made mistakes along the way.  But God Himself was a perfect parent, yet Adam and Eve disobeyed Him, caving in after being lured by the serpent.  The children of Israel rebelled over and over again, and God continually forgave them and continued loving them.  The enemy is still on the rampage, I believe more now than ever before!   


An extremely helpful article for parents can be found at http://ccef.org/why-do-kids-turn-out-way-they-do.  This article was written by Jim Newheiser, a pastor in Escondido, California, as well as a counselor and director at The Institute for Biblical Counseling and Discipleship (IBCD) in San Diego.  Parents of wayward children will find comfort and hope in this article, but all parents and grandparents will find it very helpful.


The pull of the world, especially today, is so powerful, but we need to remember that our God is more powerful than Satan.  As I mentioned in the last newsletter, I believe there are three important  things we can do as parents and grandparents when a child strays from the Lord (or has never become a Christian).  They are worth repeating:
        1) Pray without ceasing.  Live in a constant spirit of prayer.  Pray the Word of God, using scriptures. Never give up!
        2) Love, love, love your child unconditionally. 
        3) Keep the doors of communication open.

Parents who still have their children in the home, whether they homeschool or not, can have their children read some of these books to get them grounded in their faith.  They need to know why they believe.  Their faith needs to be their own, with changes in their hearts, and these books will help tremendously.  A good family discussion of each book, led by the parents, would be beneficial in transforming your children's beliefs into real personal convictions.  It is my prayer that you will be encouraged by putting some of these ideas to work in your life, and you will see God do a mighty work in the heart of your children and grandchildren, regardless of the magnetic pull the world has today - but our God is greater!  Continually ask God to put a hedge of protection around our children and surround them with God's love and goodness, until they desire and seek a personal relationship with Him.  There is always hope!





THREE LUXURIES MONEY CAN'T BUY

Recently, I read an online poll that asked, “Do you scrimp in some areas of spending so you can afford luxuries in others?” The possible responses were everything from “Yes,” to “No” with “What are luxuries?” and “I save every way I can” somewhere in the middle.

At first, I, like most respondents I’m sure, assumed luxuries meant things like massages and spa services, dinners out at nice restaurants and weekend vacations. I thought of luxuries as self-indulgent activities and material possessions. Who wouldn’t enjoy those kinds of things?

Then, my mind shifted and I began to create a new list of luxuries. My list contains things that money cannot buy, but debt can destroy:

The luxury of freedom. I enjoy freedom from debt, freedom from worrying about whether I have enough money to pay the bills and buy the groceries. I remember back in my dark financial past when debt turned me into a slave. MasterCard and Visa owned my soul. Because I’d trusted them to make my life happy, I worked for them to repay my debt. The borrower becomes a slave to the lender. Never forget that. Breaking out of the debt trap has given me the luxury of freedom.

The luxury of space. I love clean, open space in my home and my office. I struggle with that. It’s a constant battle not to allow stuff to fill the space. When I succeed, I feel an enormous sense of comfort that gives me room to breathe, relax and enjoy a calm and peaceful environment. It is pure luxury!

The luxury of time. I battle filling my life with too many activities, deadlines and responsibilities. Carving out free time to spend with my husband, children and grandson requires serious commitment. It takes time to develop and maintain relationships. Time is so finite. We get only 24 hours each day. Keeping some of that time for the things that mean most to me is what I call luxury.

I won’t try to convince you that I do not like nice things. I love fine bed linens and leather handbags. A fabulous weekend away is not something I would turn down. But when I look at the big picture of my life, they are low on my list of luxuries. I’ll take being debt-free any day over a shiny new car. I’ll opt for time with the people I love over finding a way to cough up hundreds of dollars for a leather handbag.

I never did complete that poll. I needed an option that said, “None of the above.” As frugal as I might be, I have learned to enjoy the most luxurious life I could ever imagine. I don’t have to scrimp or feel deprived because, every day, I get to enjoy the luxuries of freedom, space and time. To me, that’s living well!   

 


FOOD FOR CUT FLOWERS

Teach your children how to cook, clean a bathroom, do laundry, and other things they will need to know someday.

Help your teen start his or her own business - lawn mowing, gardening, babysitting, house cleaning, etc.  They can begin saving for college now, so they graduate without loans to pay off.



TIPS AND TIDBITS

Staying Hydrated ~ While on vacation, during a very hot week, we filled drinking bottles half full of good drinking water and froze them the night before.  In the morning we topped them up with water, and went on our way.  They provided refreshing ice cold water all day long, and helped keep us much cooler.  Sometimes a headache can be brought on by not drinking enough water, so remember to drink plenty.  A person weighing 120 pounds should drink at least 60 ounces (half their number of pounds) of water each day, and even more when they are perspiring.  Also coffee is a diuretic, and one cup of coffee requires two cups of water to meet your needs for water.


A Healthy Carry-Along Snack ~ Before our family vacation, I made a huge batch of my mother's granola recipe.  Much of it was stored in Ziplock snack bags with a plastic spoon tucked inside the bag.  These snack bags were then put into freezer bags and kept in the freezer.  They were nice to carry along with us for snacking.  Yesterday I also tucked one inside my purse, knowing I'd be gone over lunch and it kept me from eating out.  I'll include the recipe below.

Shoes for Appliances ~ If your blender or juicer is leaving black marks on your kitchen counter, give them little overshoes, by gluing some of those soft plastic medicine bottle caps onto the feet of your appliances - or just set the appliance on the caps.

Jewelry Hook ~ Screw a cup hook beside the sink (not over it) to hang rings and watches when washing dishes, unless you keep your rings on for a good cleaning as I do.


If It's Too Hot to Cook this Summer, remember to cook ahead and freeze meals before next summer comes.  That way you can simply pop them in the microwave for quick, easy and delicious meals, rather than heating up your kitchen so much.  You will also find recipes below to cook this summer or anytime.

Defrosting Your Freezer ~ Should you own a fridge whose freezer is not self-defrosting, here's a tip for you.  Wipe the inside of the freezer compartment with a cloth dampened with glycerine.  When it's time to defrost again, the chunks of ice will drop without effort.

A Lock on the Freezer Door ~ There have been times when our upright freezer door was either not shut properly or it may have popped open because of ice buildup or being too full.  Either way, the result was not so good!  So we now unlock and lock our freezer each time we use it, and so far it's working great!

Removing Hard Water Deposits on Showerheads ~ Pour at least a cup of white vinegar in a plastic bag, pull the bag up over the showerhead, so it is immersed in the vinegar, tie it above the showerhead, and allow to soak about thirty minutes or until the hard water deposits dissolve.

Mosquitos and Roses ~ This week my son, James, reminded me of a tip included in Heart to Heart the last few years, which I had not followed this summer - that mosquitoes are more prone to bite people who eat bananas during mosquito season.  So right away I peeled all my newly purchased bananas, cut them into 1-2 inch lengths and froze them for smoothies - for later.  Next I put the banana peels in the blender with water, and poured that mixture at the base of my rose plants, since they love the nutrients and that helps them flourish.  By the way, James also reminded me that eating garlic and taking 100 mg. of vitamin B1 each day will help prevent mosquito bites.  B-complex - 100 works great.  He hadn't had a bite all season.  I do take B-100, but was eating bananas some, and got my first two mosquito bites this week, as I was photographing a blue dragonfly.


Colorful Fruits and Vegetables ~ The next time you go to the grocery store and purchase all those colorful fruits and vegetables, before you wash them or put them away, why not arrange them on your kitchen table and take a picture!  It just might be pretty enough to frame, and will be a reminder to you and your family to eat foods that are good for you.

Carrot Juice and Cancer ~ An alternative health care professional told me recently that drinking an 11 ounce glass of carrot juice every day will prevent cancer.  It's sweetly delicious and is certainly a good measure in the right direction.  It may surprise you that a person receives more nutrients from carrots when they are juiced (raw, of course) than in any other form.  The enzymes in raw vegetables help convert food into energy.  The second best way nutrients are absorbed from carrots is to cook them, and the third best way is to eat the carrots in their raw form.  So the juicing process provides the very best, and cooking is next best.


 

ROASTED DILLY CARROTS
Roasting carrots brings out the natural sweetness and tossing them with pearl onions and dill adds even more delicious flavor!

 

2 pounds carrots, diagonally cut into 1" thick pieces
1 1/2 cups frozen pearl onions from 1 pound package

2 Tbsp. olive oil

1 Tbsp. butter, melted

1 tsp. salt

1/4 tsp. black pepper

1/4 cup chopped fresh dill, optional

 

Position rack in the lower third of your oven.  Preheat to 375 degrees.  In a large bowl toss carrots and onions with oil, butter, salt and pepper until well coated.  Spread in a single layer over an ungreased jellyroll pan.  Roast on lower rack until tender (about 30 minutes).  Stir in fresh dill and transfer to a serving bowl.  Garnish with fresh dill sprigs if desired.


MY MOTHER'S DELICIOUS AND HEALTHY GRANOLA


6 cups old fashioned rolled oats, uncooked
3 cups unsweetened coconut
1 cup wheat germ
1 cup sunflower seeds
1 cup slivered almonds
1 cup raw honey (I used orange blossom honey)
1 cup olive oil, cold pressed
1 cup cold water
1 cup raisins (to be added to granola after it is cooled)

1. In a large mixing bowl combine all dry ingredients and toss together thoroughly.

2. Combine honey and oil. Add to dry ingredients, stirring until well mixed. Add the cold water, a little at a time. mixing until crumbly.

3. Pour mixture into a large, heavy shallow baking pan which has been lightly greased with oil. Spread mixture evenly to edges.

4. Place on middle rack of a preheated 225 degree oven and bake for 2 hours, stirring every 15 minutes.

5. If another 15 minutes is needed to make it thoroughly dry, crisp, and golden brown, bake a little longer.

6. Turn off the oven and allow granola to cool in oven. Add raisins when it is cooled.

7. Store in cool, dry place or freeze. Serve with fresh fruit, with milk, or eat as it is.

When I made a huge batch of granola this week, I added all the above ingredients, plus the others listed below, but barely any water.

I used 2 entire boxes of rolled oats, 1 quart of honey and 1 quart of olive oil. To give you an idea of how much I had in the end, a very large rectangular dishpan was completely full.

Other ingredients I added to my mother's recipe (above) were the following:
walnuts, chopped
almonds, slivered
wheat germ
soy flour (Any flour will do, and not much, or you can omit the flour altogether)
cinnamon

a little sea salt
raisins  (Add to dried fruit to granola after it's cooled)
craisins

Note: I baked my granola at 350 degrees (rather than 225), but watched it carefully, making sure it didn't burn. It should be golden brown.  Of course, I didn't bake it for 2 hours in this case either. This worked fine and made the process go more quickly. Even a microwave will toast it nicely, and I had both the oven and microwave going.




SEVEN STEPS TO SUCCULENT GRILLED CHICKEN

(Note from Lois: Natural sweetener, stevia, will not break down your immune system as sugar does.  Stevia can be substituted for the sugars in these recipes, but only use a tiny bit.  It goes a long way.)


Outdoor cooking offers a unique opportunity to trim your summertime food budget. After you dust off your grill in preparation for delicious summer feasts, consider cooking in bulk. Then, freeze the excess for future meals. In the meantime, make sure your grilled chicken doesn’t end up too dry! Here are some easy tips for parched-proof poultry:

1. Trim off excess fat. When you grill, fat will drop down into the coals and create hot spots of fire that prevent even cooking.

2. For a quicker meal, don’t worry about marinating your meat. Instead, use a rub to add flavor. Here’s a quick rub with a dash of sweetness: 4 tablespoons oregano, 4 tablespoons smoked paprika, 1 tablespoon brown sugar.

3. Allow chicken to become room-temperature while you fire up the grill. Give briquettes 15 minutes to warm up. When they are ready, spread them evenly along the bottom of the grill to create even heat.

4. Place chicken on the grilling surface directly over the coals. Cook on the first side, 5 to 7 minutes.

5. Flip the chicken. Don’t puncture the meat while flipping. This will help the chicken retain all of its juices.

6. Apply barbecue sauce to the chicken after cooking the meat on its second side for 4 minutes. Wait 2 minutes. Then, flip the chicken once again and apply sauce to other side. Close the lid of the grill and cook for 2 to 3 more minutes.

7. Remove the chicken. Place it on a platter and cover with foil or plastic wrap. Let the meat rest for 5 to 10 minutes before serving.

If you’ve cooked several pounds of meat for storing, freeze the pieces whole or slice them (after letting them rest) for hot or cold salads, pasta dishes and casseroles. Store chicken in freezer bags to avoid freezer burn.

Here is a delicious homemade white barbecue sauce for a different twist on traditional taste:


White Barbecue Sauce
2 cups mayonnaise
1 tablespoon pepper
1 1/2 teaspoons salt
Juice of 1 lemon
6 tablespoons vinegar
3 teaspoons sugar

Mix mayonnaise, pepper, salt, lemon juice, vinegar and sugar well. Apply directly to chicken while grilling, or heat ingredients in a small saucepan and serve on the side.


Warm Barbecue Chicken Salad

4 to 6 grilled chicken breasts, shredded
1 (18 ounce) bottle barbecue sauce
1 package bacon
1 to 2 bags lettuce
1 can corn, drained
2 tomatoes, chopped
1/2 medium red onion, sliced into rings
1 to 2 cups shredded mozzarella cheese

Preheat oven to 350 F and grease a square baking dish. Combine 1 cup of barbecue sauce with shredded chicken. Spread chicken in prepared baking dish. Cover with foil and bake for 25 minutes. Meanwhile, fry bacon to desired crispness. Drain on paper towels. Crumble and set aside. Heat corn and set aside. Heat remaining barbecue sauce in a pan over medium-low heat.

Assemble the salad on each dinner plate, layering ingredients in the following order: lettuce, corn, crumbled bacon, tomatoes, onion, shredded barbecue chicken and cheese. Serve with remaining sauce, if desired.

A PRAYER FOR EACH DAY OF THE WEEK
Author unknown.  Many years ago women used to set aside a particular day of the week for their daily homemaking duties.  It wasn't a hard and fast rule, but many followed this schedule.  Someone put a meaningful pray to each day.

Monday - Wash Day
Lord, help me wash away all my selfishness and vanity, so I may serve you with perfect humility through the week ahead.

Tuesday - Ironing Day

Dear Lord, help me iron out all the wrinkles of prejudice I have collected though the years so that I may see the beauty in others.

Wednesday - Mending Day

O God, help me mend my ways so I will not set a bad example for others.

Thursday - Cleaning Day

Lord Jesus, help me to dust out all the many faults I have been hiding in the secret corners of my heart.

Friday - Shopping Day

O God, give me the grace to shop wisely so I may purchase eternal happiness for myself and all others in need of love.

Saturday - Cooking Day
Help
me, my Savior, to brew a big kettle of brotherly love and serve it with clean, sweet bread of human kindness.

Sunday - The Lord's Day
 
O God, I have prepared my house for you. Please come into my heart so I may spend the day and the rest of my life in your presence.

Breanna Lynn Hopkins was born on May 28, 2010.  She is the third child and joins a big brother and sister.  Breanna is the daughter of Mark and Valerie Hopkins, living in Virginia.  Congratulations to this very special family!

Ethan Gabriel Burnham was born on June 7, 2010.  The proud parents are
Jesse and Sharayah Burnham, living in Hawaii.  The blessed grandparents, Marvin and Lisa Campos-Rowe live in Arizona.  Congratulations to all!

On Sunday, during communion, the 3 year old little girl that I keep asked me, "Why does that juice make everyone go to sleep?"  She was watching and when people received their communion, they bowed their heads to pray and she thought that the juice was putting them to sleep. ~ Elizabeth Tromm

Do you know why I love 2 year-olds? They are so stinking hilarious!  So yesterday, we were driving with a friend in our van......a very lovely 2 year-old friend.  Autumn was riding with us in the second seat beside Natalie.  Ben was riding in the very back and was not all to pleased about being so far away from the action or the conversation that the girls were having.   I’m not really sure how it started, but Ben was yelling something and Autumn says, “Ben no shout!” to which Ben replies, “WHAT?” And Autumn says, “Ben NO shout”…..  Ben:  “WHAT?”  Autumn:  “BEN NO SHOUT!”  And pretty soon they are both shouting at each other!  And I’m driving down the road laughing so hard I’m almost crying!  I love 2 year-olds! ~ Sarah Escalera in Virginia


This morning Madelyn (3) was playing with her ponies.  She said, "Mom, these ponies have lots of babies. They are Duggar ponies!" ~ Liz Smith in Washington

At Daniel's two year checkup, while he was sitting on my lap, the doctor was checking his ears.  She was whistling and said something about having birdies in his ears.  He was really cooperative so I think she knew that would distract him.  After we got home, for days he kept saying, "I have a bird in my ear," and it seemed to really bother him.  Well, Daniel kept talking about it, so one evening as his daddy was putting up a new bluebird house he had just built, he told Daniel to come outside with him.  He asked Daniel if he'd like to put his ear up to the birdhouse hole and let the bird in his ear fly in.  He did and that was the end of his worries about the bird in his ear! ~ Rachael Breneman in Ohio

Daniel (26 mo.) was looking out the new sliding glass doors and said, "It stopped raining!  Birds all clean!  There's one!   I catch him in my bug net!" ~ Rachael Breneman in Ohio  (Daniel is my precious grandson, by the way! ~ Lois)

My daughter was talking to her son, Justin (7), about upcoming Father's Day, when he interrupted her saying, "Wait!  Mother's Day --- Father's Day --- Is there a Kid Appreciation Day?  Do we get appreciated?"  (Justin's got a point here!  I do remember when I was a kid how Children's Day was celebrated as well, and often wondered what happened to that holiday. - Lois)
