RECIPES USING GARDEN VEGETABLES IN SEASON
If you have an overabundance of tomatoes or squash right now, this salsa recipe can be canned, and the muffins can be frozen.


Moon's Salsa Recipe

6 1/2 cups Roma tomatoes, cut/blended (amount used determines "heat" ~ I do 6 cups ~ nice and hot)  I also drain off excess tomato liquid or squeeze them) 
1/2 cup Jalapeno peppers, minced (Fresh is best, but I buy a large jar from Walmart and save juice to use in combination with vinegar)
1 1/2 cup chopped onions
1/2 cup vinegar (also liquid from peppers)  I cut back on amount, if it is too liquidy.
3 cloves garlic
1 Tbsp. salt (per 6 cups tomatoes)
2 tsp. sugar
Combine ingredients, boil and simmer about 35-40 minutes till onions cook up.

(Note from Lois: Sucanat is a healthier substitution for sugar, and cutting back on the amount is a good idea as well.)

2 eggs
1 cup sugar
1/2 cup coconut oil (you can use canola)
1 tablespoon vanilla
2 cups shredded unpeeled drained zucchini
2 cups unbleached all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 cup golden raisins
1/2 cup chopped pecans or other nuts

Combine eggs, sugar, oil and vanilla. Stir in zucchini. Combine remaining dry ingredients and set aside 1/4 cup dry mixture and toss with raisins and nuts. Add zucchini mixture to remaining dry mixture and stir to blend. Fold in raisins and nuts. Place mixture 2/3 into prepared muffin tins or cups. Bake in a 350 oven 20 to 25 minutes.  Makes about 14 muffins.

CREAMY CARROT CASSEROLE
This is one of my favorite vegetable casseroles.  It also freezes well for a great side dish later on.

6-8 carrots
1/4 cup water from cooking carrots             
2 Tbsp. dry minced onions
1 clove garlic, minced
2 Tbsp. horseradish, minced
1/2 cup Duke's mayonnaise (no sugar and best tasting mayo)
1/2 tsp. salt
1/4 tsp. pepper
1/3 cup Ritz or whole wheat crackers, fine
1 Tbsp. butter
1/3 cup toasted almond slivers

Cook carrots.  Mix cooking water, onion, horseradish, mayonnaise, salt and pepper.  Arrange carrots in baking casserole, pour mixture over carrots.  Top with crumbs, dot with butter, and sprinkle almonds on top.  Bake at 375 degrees for 15-20 minutes or until heated through.

Note regarding fresh garlic cloves:  Several times I have forgotten about the garlic cloves I bought, and they get moldy or completely dry up.  Martha Grimes in Virginia said she freezes the whole thing!  A good idea, which I put into practice this week, except that I separated the cloves, peeled them, and froze them that way.  Either way is better than allowing them to go bad.  

FUN AND INTERESTING FAMILY CONVERSATION AROUND THE TABLE
DID YOU KNOW? ~ Author unknown ~ Here are some very interesting facts which you may have already heard, but why not use them with your family?  Share some of these with your children while sitting at a computer keyboard.  The others pertain to the English language, or give details about the human body, animals, inventions, and history.  They would make good topics of conversation at the dinner table.

"Typewriter" is the longest word that can be made using the letters only on one row of the keyboard.
"Stewardesses" is the longest word typed with only the left hand and "lollipop" with your right.
The average person's left hand does 56% of the typing.

EIGHT TIPS FOR THE FOODIE IN YOU

Fresh corn on the cob would be summer's perfect offering if it weren't for those annoying husks. It's a lot of work to get them off cleanly, including the fine silk threads. Read on to learn how to make shucking corn a lot easier.

Quick corn. A quick and easy way to cook corn on the cob is to put it in a 350-degree oven, husks and all. Don't bother preheating the oven or soaking and peeling the corn. Cook it from a cold oven for 25 minutes. When it's done, the husks peel off easily. I like to put chili powder and a little lime zest into the butter that I serve with it. Jo M., Ohio
(Note from Lois: Our grocery store supplies a large trash can setting right next to the corn on the cob, for those who would rather husk their corn in the store.  I do that and it saves lots of mess and trash at home.)

Banana pudding. I have an easy, healthy no-cook dessert: Peel two bananas per serving. Cut them into pieces and place in a food processor. Add one teaspoon of cocoa powder per banana, adjust to taste and blend until smooth. This makes a mousse-like chocolate pudding. If you freeze the bananas first, the result is like chocolate ice cream. Add nuts, and you've got rocky road. My granddaughters love it. Sandy, e-mail

Produce Princess. By the end of the summer, I have more produce from my garden than we can consume. I chop zucchini, summer squash, green peppers, onions and celery. Then, I put them in quart or gallon-size freezer bags so I have an abundant supply of colorful vegetables all year. Sometimes, I make my own stir-fry mixes just like the ones that you can buy at the store. This has cut my annual produce cost, especially in the winter months, and it helps us eat more healthful meals. Sheila P., Utah

Easy Cherry.
The pointed end of a potato peeler works to get the seed out of a cherry. Just push it in the stem end and pull out the seed. Karen I., Minnesota

Breezy Butter. I was out of spreadable butter with olive oil, so I made my own. I mixed 1/4 cup olive oil with 1 pound of softened butter. Be sure to refrigerate. Constance K., California  (Note from Lois: I make this butter and find it keeps very well when not refrigerated, and is easy to spread.)

Tuna Melt. My mother always crumbled potato chips on top of her tuna casserole. Then, she put cheese on it and baked it for a few minutes just to brown the top. It gave it a nice crunch! April P., e-mail

Smart Nut. Last week at the store, all they had were nuts that were salted or completely unsalted. Since I prefer lightly salted, I bought a jar of each, mixed them together, and rebottled them. The mixture is just right! Judy S., Oklahoma

Spinach Squeeze. My favorite way to squeeze moisture from thawed spinach used in recipes is to do this: Stab the sides and bottom of the spinach box with a steak knife. Then, squeeze the box firmly until no more green juice runs out. Then, you have dry spinach to use in your recipe when you open the box. Jeanne, Ohio

LIVY'S STORY

This week marks a year since I thought I would never have a baby.  Doctors on both sides of the Atlantic somberly told me that the tiny life inside me was not developing and that, for all intents and purposes.  I'd had a miscarriage. But I get ahead of myself . . .

Soon after our marriage, Ondra and I began praying and hoping for a baby. After more than a year I conceived, but I got a positive pregnancy test and miscarried all in the same day. Yet another year passed, and our hearts were grieving. We both desperately wanted children. In June of 2009, before we went to the States for the summer, my OB/GYN said after such a long time without a successful pregnancy, I was considered "infertile" and that Ondra and I would both need to undergo testing upon our return to the Czech Republic that August.

We left for the States and I distinctly remember sometime in July praying and truly surrendering to the Lord regarding our desire for children and our seeming inability to have them. I placed the situation in His hands and deep in my heart, I felt that He had heard me and that He would answer my prayer and enable me to conceive. What I did not know at the time was that I was already pregnant! 🙂

After getting a positive home pregnancy test in August and tentatively rejoicing with Ondra, I made an appointment with my American OB/GYN. I had visited him the previous summer after my miscarriage and he knew how I longed for a child. I became a little suspicious during the ultrasound when the technician didn't seem at all enthusiastic. My suspicions were confirmed when the doctor. gently placed his hand on the small of my back and led me into his office.

My eyes blurred as I listened to the following words, "Lori, it's too early to tell, but there is no fetal pole and it looks like the baby is not developing. I am very sorry, but I think it is extremely likely that you will miscarry". Two days later Ondra and I returned to the Czech Republic with heavy hearts. My Czech doctor did another ultrasound and echoed the other doctor's diagnosis. "The baby is not developing. Most likely you have had a missed miscarriage and we might have to do surgery". I had done a ton of research on-line and refused to go through a DNC (scraping of the uterus) based on just the ultrasound alone. I told him I would wait to see if I miscarried on my own, and he scheduled me for blood work and said to call for the results the following week.

Waiting. Painful, horrible, wrenching, waiting. I did not know if my baby was alive or dead. I did not know if I would start to lose the baby at any minute. I felt like a time-bomb just waiting to go off. I waited and tried to believe, tried to remember the promise I'd felt in my heart just the previous month. "Lori, I will give you a baby".

That weekend was torture. On Monday, Ondra had to call the doctor to get the results of the blood test because the doctor who was in the office that day didn't speak any English and we wanted to be sure we understood the results. Ondra called me as I was pacing a classroom at the school where I worked. "He said everything's fine" (a guy's version of the doctor's words). I was like, "What does that mean, 'everything's fine'? Am I still pregnant? Are the blood levels where they should be? What are the numbers exactly?" But that's all Ondra knew. I had to wait until the following day before I knew what "everything's fine" really meant.

Another ultrasound. My third in two weeks. Ondra and I waited with bated breath. Not only was there a tiny little BODY (not just a fetal pole), there was a beating heart!!!!!!! What a difference a couple days can make!

I got an email from my dad that day which I will never forget. It said, "The baby can hide from the doctors, but she can't hide from God" and he included the following verse from Psalm 139 - "I was not hidden from you when I was woven together in the secret place".

To make a LOOOOOONG story short (that little baby decided to stay inside me for nearly 10 months!), our precious Olivia Hope was born on May 1, 2010. She was perfect. Robust. Lively (the week before she was born, while checking her heartbeat, a nurse told me, "You have a little football player in there!") Beautiful. The inspiration for her name comes from this story, and from the following verse:

1 Peter 1:3 (New International Version)  Praise be to the God and Father of our Lord Jesus Christ! In his great mercy he has given us new birth into a living hope through the resurrection of Jesus Christ from the dead,

When hope seemed dead, when all seemed lost, GOD came through for us. Livy is a living testament every day to God's goodness in our lives and to the HOPE which we have in Him.


HELP CHILDREN CHANGE THEIR HEARTS

Too often parents focus only on behavior, getting the right actions down, but they don't address the heart. Jesus criticized the Pharisees, saying that they looked good on the outside but their hearts were still not changed. He said, "First clean the inside of the cup and dish, and then the outside also will be clean."

Focusing on behavior change is not enough. Many parents work hard to help their children look good on the outside. Inadvertently, these parents teach their children "image management" the ability to appear good, clean, and nice. A change of heart is what children really need though.

Unfortunately, you can't force children to change their hearts. But we can do a lot to motivate them to make the necessary changes. We've identified several tools that, when used properly, address the heart. First, use sorrow instead of anger in the discipline process. Parents who misuse this technique often lay a guilt trip on their children. The key is to be genuine. If you, as a parent, look past your anger for a moment you will see that you truly are sad about what your child has done because you know the long-term consequences of such behavior. Reflect it in a gentle way. It's amazing to see how children will respond.

Another way to influence a child's heart is to use the scriptures. The Bible has an amazing quality, the ability to pierce through to the thoughts and intentions of the heart. Don't use the Bible in a harsh way. Instead reveal what the Bible has to say about being kind or respectful or obedient. There's a lot of wisdom and conviction that comes through the scriptures.

Be sure to talk about the heart during times of correction. "I can see you're angry because I said no, I'd like you to take a break for a bit and settle your heart down and when you're ready, come back and we'll talk about it." It will take work and a child may need some long times to settle down at first, but a change of heart is worth it in the end. Resolve the tension by having a Positive Conclusion together. Talk about what went wrong and why it was wrong. Address heart issues, not just behavior and help children see things from a deeper perspective.

You may think of some other ideas but whatever you do, don't rely on simple behavior modification techniques. They don't go deep enough and often don't address the real issues.


CONSEQUENCES OF A MORAL TUMBLE

(Note from Lois: Although this had been included in Heart to Heart before, we should all make a printed copy of this and keep it in a handy location, lest we forget what devastating consequences a moral tumble can have!  It's alarming how these consequences are lived out every day in the lives of an increasing number.  Hopefully this list will make a difference.)  

Whenever I feel particularly vulnerable to sexual temptation, I find it helpful to review what effects my action could have:  

  • Grieving the Lord who redeemed me
  • Dragging His sacred name into the mud
  • One day having to look Jesus, the Righteous Judge, in the face and give an account of my actions
  • Following in the footsteps of those people whose immorality forfeited their ministries and caused me to shudder
  • Inflicting untold hurt on my best friend and loyal spouse
  • Losing my spouse’s respect and trust
  • Hurting my beloved children
  • Destroying my example and credibility with my children and nullifying both present and future efforts to teach them to obey God (Why listen to a man/woman who betrayed Mom/Dad and us?)
  • If my blindness should continue or my spouse be unwilling to forgive, perhaps losing my spouse and my children forever
  • Causing shame to my family
  • Losing self-respect
  • Creating a form of guilt awfully hard to shake – even though God would forgive me, would I forgive myself?
  • Forming memories and flashbacks that could plague future intimacy with my spouse
  • Wasting years of ministry training and experience for a long time, maybe permanently
  • Forfeiting the effect of years of witnessing to my relatives and reinforcing their distrust for Christians that has only begun to soften by my example, but that would harden, perhaps permanently, because of my immorality
  • Undermining the faithful example and hard work of other Christians in our community
  • Bringing great pleasure to Satan, the enemy of God and all that is good
  • Heaping judgment and endless difficulty on the person with whom I committed adultery
  • Possibly bearing the physical consequences of such diseases as gonorrhea, syphilis, chlamydia, herpes, and AIDS; perhaps infecting my spouse, or, in the case of AIDS, even causing his/her death
  • Possibly causing pregnancy, with the personal and financial implications, including a lifelong reminder of my sin
  • Bringing shame and hurt to these Pastors, Elders, and Deacons (list names)
  • Causing shame and hurt to these friends, especially those I’ve led to Christ and discipled (list names)
  • Invoking shame and life-long embarrassment upon myself, reproach never erased!

Endure, persevere joyously, contentedly, hopefully, patiently in the midst of all your pain and endure because what is eternal is so much more valuable!

R ejoice in suffering, because you know that suffering produces perseverance; perseverance, character; and character, hope. And hope does not disappoint, because God has poured out his love into your heart by the Holy Spirit, whom he has given to you!

A lways excel in the work of your Lord, be steadfast, unmovable, because you know that the work that you do for the Lord isn't wasted.

WE'RE ALL GETTING OLDER

Lost in the Strangest Places ~ An elderly Floridian called 911 on her cell phone to report that her car has been broken into. She is hysterical as she explains her situation to the dispatcher: "They've stolen the stereo, the steering wheel, the brake pedal and even the accelerator! " she cried.
The dispatcher said, "Stay calm. An officer is on the way."
A few minutes later, the officer radios in. "Disregard." He says. "She got in the back-seat by mistake."

Family ~ Three sisters, ages 92, 94 and 96, live in a house together. One night the 96-year-old draws a bath. She puts her foot in and pauses. She yells to the other sisters, "Was I getting in or out of the bath?"
The 94-year-old yells back, "I don't know. I'll come up and see." She starts up the stairs and pauses as she wonders, "Was I going up the stairs or down?"  The 92-year-old is sitting at the kitchen table having tea listening to her sisters. She shakes her head and says, "I sure hope I never get that forgetful, knock on wood." She then yells, "I'll come up and help both of you as soon as I see who's at the door."

Cruising Along ~ Two elderly women were out driving in a large car.  Both could barely see over the dashboard.  As they were cruising along, they came to an intersection.  The stoplight was red, but they just went on through.  The woman in the passenger seat thought to herself, "I must be losing it. I was sure we just went through a red light!"  After a few more minutes, they came to another intersection and the light was red again.  Again, they went right through.  The woman in the passenger seat was sure that the light had been red again, but was really concerned that she was losing it.  She was getting nervous!  At the next intersection, sure enough, the light was red and they went on through.  So, she turned to the other woman and said, "Mildred, did you know that we just ran through three red lights in a row?  You could have killed us both!"
Mildred turned to her and said, "Oh, dear!  Am I driving?"  

Old Friends ~ Two elderly ladies had been friends for many decades. Over the years, they had shared all kinds of activities and adventures. Lately, their activities had been limited to meeting a few times a week to play games. One day, they were playing games when one looked at the other and said, "Now don't get mad at me.  I know we've been friends for a long time, but I just can't think of your name!  I've thought and thought, but I can't remember it. Please tell me what your name is."
Her friend glared at her. For at least three minutes she just stared and glared at her. Finally she said, "How soon do you need to know?"

Driving on the Freeway ~ As a senior citizen was driving down the freeway, his car phone rang.  Answering, he heard his wife's voice urgently warning him, "Herman, I just heard on the news that there's a car going the wrong way on Interstate 77. Please be careful!"
"Gracious!" said Herman, "It's not just one car. It's hundreds of them!"

Little Round Table ~ You've probably seen the round cardboard tables, selling for very little in department stores.  They also come in particle board, some having a shelf.  I find they are one of the most nifty pieces of furniture to fill up a corner of a bedroom, living room or dining room, as well as a decorating opportunity and storage unit for just a few dollars.  You can easily make a round tablecloth using a good quality sheet that matches your room or you can purchase one.  A wide four-inch band of ruffles gives extra weight to the tablecloth so it will hang well, but that isn't necessary.  Decorate the top with framed photos, a flower arrangement, teapots, or books.  Then use the space under the table for hidden storage!

Wanna know if I have a strong-willed daughter?  Gracie (7) to Mom: "Mama, when I get older and you quit ruling over me, I'm gonna get myself my own dog."  She was very sweet and, believe it or not, not the least bit disrespectful. My husband, Mike, was going over the letters on the fridge with Raylie ( 4), when he asked, Where is the Y?"  I told him I took it off, trying to remove it from her vocabulary -- and Raylie asks, "Whyyyyyyy?" ~ Julie Karsten in Washington 

Karis (3) instructed me to shut the door to her room because she and Karlie (20 mo.) are "just hanging out a little" ... not sure if I should be worried or not. ~ Meaghn DeLong in North Carolina This isn't a funny quote, but I think it is sweet how my two year old grandson, Daniel, is not demanding.  Rather than saying, "I want to go outside," Daniel will say, "Maybe we should go outside."  "Maybe we should play with playdoh." etc. ~ Lois

These last four gems are from Annetta Elgie in Arkansas.  She is the grandma of Jack, Helen and Henry who live in Texas:

Henry (only 3), crying, says, "I don't like naps, they are too boring!"

  My daughter-in-law, Kim, is homeschooling and she overheard this conversation between the two oldest while they were at the table doing homework:  Helen (7) said to Jack (9), "Jack, that is not what I said we had to do.  Did you do "active listening" when I was talking to you?"  

While riding in the car,  Helen (7) asked, "Mom, what are mammals?"  Mom: "Mammals give birth to live young and nurse their babies."  Helen: "Oh, so you and I are mammals, but Daddy, Jack and Henry aren't!"

My daughter-in-law came home from work tonight and saw 3 year old Henry's plate with all of his baby corn still on it.  His daddy (our son, Todd) told me Henry said, "They were too cute to eat!"
