Blessed with Apples

I decided to visit a garage sale at the end of our country road yesterday.
I'd always wanted to meet these folks because the guy is an Olympic Dressage
winner and I've heard so much about him. I can see his lovely barns from my
house when the leaves are off the trees. When I arrived there we were
blessed with many of their cast offs. They told us the stuff was going to
the dump anyway! The biggest blessing was the produce from 5 mature apple
trees. We were to receive a killing frost last night (and we did) and the
apples would be ruined by morning. They didn't have anyone that wanted them
and they don't can so.....I spent 4 hours with my children picking apples.
My garage floor is filled with bags and bags of apples. This was truly an
example of...given and you will be given too. You see, we have some friends
at our church that have been out of work for awhile. So when we picked our
own apple trees I gave away over half of our apples instead of keeping them
all for myself. Now I have the motherload of apples. I'm sure I'll give
more away but I also feel I'm to put some of these apples up since God
placed them in abundance in my lap.

Now for the question. I still have 40 qts of applesauce left from last
years canning. I'll can some into apple pie filling and a few more quarts
of applesauce....then what? I don't have a place to keep these in cold
storage so only have about 3 weeks before they'll freeze in the garage. Any
ideas about unusual uses for apples?....Deanna
