Blessed with Bounty of all kinds - recipe requests and questions

I feel so blessed lately, I wanted to share. The Lord has truly been
smiling upon my husband and me lately. With so many bad things going on
in the world and to my friends lately, I feel almost guilty, which
realistically I realize is ridiculous, so it makes me even more thankful.My husband's new job is of course the thing we are most thankful for
lately but we have also been blessed with so much else as well.Today we were driving home from an auction in Emma and had a tire blowout

happened, the jolt was so severe I thought someone had hit us from
behind. We were surrounded by several cars in back of us and a huge
truck with several cars behind it on the right of us. Thankfully
everyone else was paying close attention and gave us the room we needed
to pull over on the right shoulder as quickly as possible without
incident. I'm so thankful my husband was driving, most of the time I
drive when we take my truck. If I had been driving I would have
completely lost control of the car because the moment it happened my back
was torqued and I had a severe amount of pain course through my body.
Some of you may remember I've had horrible problems and many surgeries on
my back. There was no way I would have been able to continue to control
the vehicle. I just feel so blessed that the Lord was looking out for
us, it could have been a horrible and fatal outcome had I been driving.
I may be in a little pain for awhile again, but we're alive!We are blessed that our chickens are laying now - yea! It's so nice to
have fresh eggs again.We have had the BEST year for pears in the 7 years we've lived here. We
have 3 trees all different, and each was or is so full of pears, the
branches are touching the ground. We've been giving away pears left and
right and I still have 1 and 2/3 of a tree yet to pick. I wasn't
planning on canning this year, but I really don't have much of a choice.
I'll start making pear butter and pear honey tomorrow.***If anyone has any pear recipes that they would like to share with me,
I'd really appreciate them! Also, does anyone know how or have any
canning recipes that are sugar free? I have a lot of diabetic friends
but I've heard that you shouldn't can using Equal - is this true? What
about Splenda?Also we have about a zillion black walnut trees and tons are all over the
ground now. I'm not crazy about them myself, except in a few limited
recipes (sharing recipes here would be appreciated too), but lots of my
friends like them. But if anyone has any ideas on the best way to
harvest them (is it too late if they are on the ground already?) I've
also heard that some can be bad and you should mark the good trees - how
do you tell, just eat them?We also have a persimmon tree that is loaded. I have no idea what to do
with those. I did learn the hard way a couple of years back when NOT to
eat them. I had read that you need to wait for the first frost to pick
them, but then I also read that they could be ripened in a bag. Does
anyone know anything about these trees? I'm having a difficult time
finding information - most of my friends have never even heard of them!I hope this doesn't come off as if I am bragging, I'm just so thankful
and feeling so blessed I thought I would share.Leacy
