Here are a couple of easy canning recipes.

Dill Pickles
7-8 lbs. of 4 to 6 in. cucumbers
1/2 cup canning salt
1 quart vinegar
3/4 cup sugar
1 quart water
3 tablespoons pickling spices.
dill heads - 1 for each jar

combine salt, sugar, vinegar and water in a pot. Add spices and simmer for
15 min.
Pack cucumbers in hot jars, leaving 1/4 inch of head space. Put dill head
in each jar.
Bring vinegar & water mixture to a boil. Pour mixture over cucumbers,
leaving 1/4 inch head space. Process 15 min. in boiling water bath.

This is an easy recipe for Strawberry Jam.

Strawberry Jam
2 quarts strawberries
2 tsp. grated orange or lemon peel
1 package powdered pectin
7 cups sugar

Crush strawberries. Put 4 1/2 cups berries and grated peel into sauce pot.
Add pectin and place over high heat. Stir until mixture comes to a rolling
boil. Add sugar; return to a rolling boil. Boil hard for 1 min. Stir
constantly. Pour into hot jars, leaving 1/4 inch head space. Process 10
min. --Makes about 5 pints.

This is an easy recipe for Apple Butter.

Apple Butter

2 doz. med. apples, quartered
2 cups sweet apple cider
3 cups sugar
1 1/2 tsp. cinnamon
1/2 tsp. ground cloves
cook apples in cider until tender. Press through sieve or food mill. cook
3 quarts of pulp until thick enough to round up in a spoon. Stir
frequently. add sugar and spices. cook slowly, stirring frequently, until
thick. Pour into hot jars, leaving 1/4 head space. Process 10 min.
