Chili mega cooking style

Posted by: dgarnera <dgarnera@...>

This is very good, I will put in original recipe which I have tasted and
was good, then I will put my additions/changes which is also good. For a
regular family 2-4 meals, for me as the only adult and my daughter and
toddler (the boys don't like it- things have to be plain for them) it is
12 meals!!! Way to make the meat stretch!!!

Chili
4 lbs red beans (8 cups dry beans)
4 lbs ground beef
4 cups onion
8 tbsp minced garlic
4 tb chili powder
4 ts salt (I used more)
4 ts cumin
4 ts oregano
4 ts cocoa
2 ts repper sauce
4 cans whole tomatoes undrained

Soak beans overnight. cook until tender. cook and stir beef, onion, and
garlic. Drain, stir in remaining ingredients except beans. Break up
tomatoes, heat to boiling and simmer one hour. Stir in beans, simmer 20
min.

Debra's chili

4 lbs red beans (next time I will mix this with black and pinto too!)
2 lbs organic ground beef
4 cups onion
8 tbs minced garlic
2 cups chopped green bell pepper
1 cup chopped celery
2 cups grated carrot/zuccini mix (We grated a ton of carrots and
zucinni, mixed them up and froze them in 2 cup quantities for soups,
sauces and muffins etc...)
1 #10 can of chopped tomatoes in sauce
then all of the seasonings as above. cook the same way

It is very good. And 12 meals for 2 lbs ground beef, not bad!
