food storage questions

Hi!

I have some question regarding food storage.

First of all, onions. I did freeze some this year after I chopped or minced
them. Now, I want some fresh though. I have heard I can store them in
panty hose, separated by a knot each. Does anyone know if there is truth to
that? Will this help them last longer than the ones I keep in my drawer?
For some reason mine seem to rot with a month or so.

Second, potatoes. How can I store these so that they won't shrivel and turn
to mush? I was thinking I could put them in a rubbermaid container in my
garage..my garage stays quite cool and I use this for my food storage. Is
there a way I could prolong their life? Potatoes get so expensive in the
winter months here.

Mushrooms, I just acquired about 4 lbs. of white cap mushrooms. I would
like to dehydrate them. Should I leave them whole or slice them up? Any
tips?

My number 1 focus right now is preparing for winter. We are looking at
rising costs, a hard winter, limited potential to get out in the hard winter
months, as well as who knows what the situation will be like if people
panic. I don't think I am panicking I just want to be prepared. We live
near the Cascade Mountain Range and everyone has said it is going to be a
long cold winter. I want to be able to focus on homeschooling and daily
issues rather than worry about food, budgets, and other problems winter
causes. Any tips you can give me?
