fresh herbs vs. dried herbs

I have a confession to make. I grow this fairly decent herb garden every
year and end up dehydrating most of the herbs and never using them fresh.
As I was making a big marina sauce in the crock pot I was reaching for
dried herbs and thought, "the herb garden is so overgrown I could use fresh
this time". So I got brave. Headed out to the garden and started
gathering. I came in with a handful of each herb I needed. Then I stood in
front of the pot unsure of how much to put in. When they are dried I just
jump till it looks good. I gathered up my courage started mincing herbs and
throwing them in. I had gained a bit more courage by picking off these ugly
looking caterpillars off my parsley. Threw them onto the side walk and
shocked my children by stomping everyone of those caterpillars into the
sidewalk, creating quite a gooey mess! Granted I'd did this between the
time I tried to get David to do his English and the time that he actually
got excited about English. Guess I sort of took my frustration out on the
caterpillars.

Now I'm asking for help. How does one judge how much of an herb to use when
it's fresh compared to dried? Deanna
