Pear Butter
2 qts. pear pulp (about 20 med)
4 c. sugar
1/3 c. orange juice
1 tsp grated orange rind
1/2 tsp nutmegQuarter peel and core pears. Cook until soft, adding oly enough water to prevent sticking. Press through sieve or food mill. Measure pulp.
add rem ingredients and cook until thick, about 35 minutes. stir frequently. leave 1/4" headspace and process pints and quarts 10 min in boiling water bath.Pear chutney

1 cup raisins
1 Cup chopped onions
2 to 3 cups brown sugar
1/4 c mustard seed
2 tbsp ginger
2 tsp salt
1 clove garlic minced
1 hot pepper finely minced
5 c vinegarcombine all ingredients in large sauce pot. Cook slowly until thick, about 40 minutes. Stir frequently to prevent sticking. Leave 1/4" headspace and process pints 10 minutes in boiling water bath.
