piezo/magnetics and strings

I bought cheap (5pks for $20 - for coated strings!). They are supposed to
be their brightest strings but I find them to be very mellow through my
piezo bridge straight into the P.A. system. I use extra lights 10-47.I am thinking about throwing away the low E and moving the strings down
adding a 9. This would make a 9-39 super slinky acoustic set with a
bendable third. Will it sound OK? I am not worried about volume with the
lighter strings that's why I am plugged in. I will own a hybrid (Parker
Parker) before years end. I am planning now for how to get as good an
acoustic tone as possible while still being able to play electric as well.
Will an acoustic set sound good through magnetic pickups? Not talking heavy
metal sound just praise and worship.Kevin
