This is a fall time favorite at our house.
PatPumpkin Whoopie Pies
1 lb. box brown sugar
2 eggs
1 sm. can solid pumpkin
1 tsp. salt
1 tsp. baking soda
3 c. flour
1 tsp. baking powder
1 tsp. each cinnamon,
1 tsp. vanilla
ginger and ground cloves
1 c. cooking oilCream together sugar and oil, add eggs and pumpkin. Gradually add sifted dry
ingredients and mix thoroughly. Drop by tablespoons on ungreased cookie
sheet, trying to make them all the same size. Bake at 350 degrees 10-12
minutes.Filling:
2 egg whites
2 Tbsp. powdered sugar
2 tsp. vanilla
4 Tbsp. milk
4 Tbsp. flour
1 c. shortening
1 lb. box powdered sugarCombine ingredients and beat well. Add 1 lb. box of powdered sugar. Beat
until fluffy. Grab 2 cookies about the same size, place filling on one and
top with the other. Bottoms together.
