I prefer not to run stereo on bass, but on acoustic guitar I very often use a Boss AD-3 which has a stereo output. The pedal has stereo reverb and a very nice stereo chorus which really benefit from this - I run into two channels of the PA system and instruct the sound engineer to pan them hard left and hard right. It really helps to spread out the sound of the guitar and to separate it from the vocals and bass, plus it helps compliment other stereo instruments like the keyboard. I can't hear the effect myself unless I monitor in stereo with two wedges, but that is normally not possible in church.
