Honestly, I just use GarageBand. It has the necessary export options, it's simple to use, and it's easy to get. I've poked Audacity a few times, and I also have something called "Studio One 2", which is the free Presonus software.

The real question is, what are you realistically going to do with these recordings? If you're looking to actually release recordings for sale, the learning curve on more professional level software might well be worth it. Otherwise, I'm not sure you'd really benefit from all the bells and whistles?
