Sorry I wasn't able to get to this sooner.Here are the recipes:
Microwave Apple Crisp
6-8 medium apples
2 TBSP lemon juice
1 cup quick-cooking oatmeal
1/3 cup packed brown sugar
1/3 cup wheat flour
1/4 cup wheat germ
1 tsp cinnamon
1/3 cup melted margarinePrepare apples: core, peel and slice thin. Place apples in 1 quart plastic
microwaveable dish.
(I use the Tupperwave 1 qt dish from Tupperware)
Sprinkle with lemon juice.
Combine dry ingredients. Mix in melted margarine until mixture is crumbly.
Sprinkle over
apples. Microwave on High for 9-12 minutes. Test for doneness - apples
should be soft.
Standing time: 2 minutes.Apple Bread
3 eggs, slightly beaten
2 c - sugar (I used 1 3/4)
1 c - oil
1 tbsp - vanilla
3 c - flour
1 tsp - baking soda
1 tsp - cinnamon
4 c - chopped apples (3-4 apples)
pecans or walnutsToppings
2 tbsp - sugar
1/2 tsp - cinnamonGrease loaf pans. Preheat oven to 325 degrees.
Stir together eggs, sugar, oil and vanilla.
Combine flour, soda, cinnamon in bowl. Stir in the liquids.
Stir in apples & pecans (or walnuts).For toppings, combine sugar and cinnamon. Then sprinkle mixture over tope
of loaves.Bake for 1 hour & 10 minutes.
Bread tastes better on the second day.Pam
