Marci, I also thought that was a lot of sugar the first time I made them.
I think you could use less, but you will have to let them sit LONGER for
them to become sweet. I don't think you could eat them the next day. The
longer they stay in the sugar the better and sweeter they become. Before
you slice them make sure you rinse them and dry them with a paper towel. I
have three gallon going also. I may try less sugar and see how they turn
out. You could always add more as time goes by.
