Marci, I love lemon cucumbers for fresh eating.  They may be too soft for pickles (although I have made pickles out of them), but they are wonderful fresh.   they are sweet and tender---never bitter.  I pick them young before they turn yellow.  They are also easy to digest.  They make good refrigerator pickles with fresh dill, fresh lemon juice and fresh garlic.
