PUMPKIN PICKLES
2 1/4 cups sugar
2 1/4 cups vinegar
3 cups water
3 cinnamon sticks
15 cloves
4 lbs pumpkin
Combine sugar, vinegar, water, and spices and boil this
syrup for 10 minutes. Peel the pumpkin and cut into
1 inch squares to make about 6 cups. Boil in the syrup
for 5 minutes, then cover and let stand for 1 hour.
Then simmer for 1 hour until the pumpkin is transparent.
Remove spices. Seal in hot jars and process 15 minutes.
