This is a family sald that my Aunt Jeanette serves at all family gatherings.
She's famous for this salad several counties wide but the recipe is not
original with her. I really like it. Don't be thrown by the sauerkraut.
This is a cold sweet salad that can keep in the fridge for 2 weeks once
made.2 1/2 lb can of kraut
1 1/2 cups sugar (I use honey but I just dump it in to taste, I'll try to
measure the next time.)
2/3 cup cider vinegar
1 cup chopped celery
1 cup chopped green pepper
1/2 cup chopped onion
1 small jar of pimentos.Wash kraut well. Drain. Boil sugar and vinegar till clear. (if I use honey
I don't have to boil...just disolve honey into vinegar with a whisk).
Combine all ingredients. Refridgerate overnight. It needs to sit a night
