several relish recipes

HOT DOG RELISH
4 c. ground onions
4 c. ground cabbage
2 c. ground green pepper
2 c. red pepper
2 c. ground cucumbers
4 c. vinegar
1/2 c. salt
6 c. sugar
1 tbsp. celery seed
2 tbsp. mustard seed
1 1/2 tsp. Turmeric

Grind vegetables and place in crock with the salt; let stand overnight. Next
morning, rinse and drain well. Combine the rest of the ingredients in a
kettle large enough to accommodate the mixture and heat to boiling. Simmer 3
or 4 minutes and seal in pint or perhaps half pint jars.

Cucumber Relish

4 cups ground, unpeeled cucumbers {about 4 }
1 cup ground green peeper {about 2 }
12 cup ground red peppers { about 1 }
3 cups ground onions
3 cups finely diced celery
14 cup salt
3 12 cups sugar
2 cups white vinegar
1 tabelspoon celery seed
1 tablespoon mustard seed
Use coarse blade on grinder, combine all vegetables in large bowl, sprinkle
with salt.
Cover with cold water, let stand 4 hours drain thoroughly in colander, press
out all excess liquid.
Combine sugar, vinegar, celery seed and mustard seed.
Bring to a boil ,stiring until sugar is dissolved.
Stir in drained vegetables, simmer 10 minutes.
Pack into jars to within 12 inch of the top.
Put on cap, screw band firmly tight.
Process in boiling water bath 10 minutes.
Yield 5-6 pints

Sweet Pickle Relish

6 lbs. (8 large cucumbers) not peeled, with seeds removed
2 hot peppers, seeds removed
2 red peppers, seeds removed
4 green peppers, seeds removed
2 lbs. onions
Chop very fine or chop in blender. Let stand overnight in hot brine of 1/2
gal. (2 qts.) hot water and 1/3 cup coarse salt.
In the morning, rinse and drain well. Add 1 tblsp. tumeric, 2 tlbsp. mustard
seed, 1 tblsp celery seed, 1 qt. white vinegar, 6 cups white sugar.
Boil together all ingredients and thicken with 3 heaping tblsp cornstarch.
Put into hot sterilized jars and seal.

Cucumber Relish
Ingredients

4 medium Kirby cucumbers (about 4 ounces each), diced
1/4 cup seasoned rice vinegar
2 tablespoons diced red onion
1 tablespoon vegetable oil
1/4 teaspoon crushed red pepper
Mix ingredients together in a medium bowl. Makes about 2 1/2 cups.
