Wonderful New Relish Recipe!

A few weeks back (and last year) I made a request to the list regarding a
relish recipe that had alot of mustard in it like the hamburger mustard
relish you can buy at the store. I've been looking for a recipe for 3 years
and have not been able to find one.I happened upon a recipe in one of my Amish cookbooks that was simply called
"Sandwich Spread". It called for 2 cups of prepared yellow mustard and said
it was wonderful on hotdogs. I decided to give it a try today. It's so
good I scooped the leftovers out of the pan and ate them with a spoon. To
give you some idea of what it's like, envision the taste of bread and butter
pickles in a creamy mustard sauce. It was really easy too.Here's the recipe but I'm going to rename it. Let's call it: Mustard
RelishMustard Relish
6 lg. onions
6 lg. cucumbers
6 lg. green pepper (oops..just realized I forgot the peppers, so this is
good without the peppers too.)
12 green tomatoes
2 cups vinegar
2 cups water
5 cups sugar
3 Tbs. salt
2 cups prepared yellow mustard
5 Tbs. flour
1 Tbs. turmeric
2 Tbs. celery seedGrind vegetables (I shredded them in the food processor). Let stand for 1
hour; drain. Boil veggies, sugar, salt and vinegar for 15 minutes. Add
water to the 5 TBS flour to make a thick paste. Add the mustard, turmeric
and celery. Whisk until creamy. Stir this mix into the boiling veggie mix.
Boil a little longer until it thickens. Ladle into the jars, seal, water
bath for 15 minutes. This made 9 pints.Deanna
