Deanna..so glad that the insurance is picking up the tab on things you were concerned about..

We had good time at my inlaws yesterday.. tons of food.. we all suggested next time mom do a one pot meal- like spagetti 🙂 my goodness... there was meat for the tacos- 2 different types of crunchy shells, soft tortillas, chips, refried beans, rice, tamales- 2 kinds, all the condiments, my homemade salsa, and homemade guacamole. I had a taco salad- it was good.

This morning I got 2 crock pots going with chuck roast.. I added bq sauce, chopped onion, chopped bell pepper, dijon mustard, peach preserves, some brown sugar and some tobasco sauce.. these will cook until 12:30 when I pull them out- combine sauces into one pot, slice up the beef and put all of it back in with the sauce and some more bq sauce. I also made a really good coleslaw recipe that I got off of foodnetwork.com- it is a Bobby Flay recipe (he does the bq show). The episode this recipe was one also had bq pork sandwiches so I figured it would be good for our bq beef sandwiches. I also made pasta salad with chopped marinated artichoke hearts, chopped green onions, chopped pepperocinis, chopped green olives. a bit of mayo, sourcream, dijon mustard, pepper, celery salt, and kosher salt. yum! all is in the fridge letting the flavors mingle. We will be leaving in a couple of hours.

I have been looking forward to texas bq for a couple of weeks now. I am excited.

It will be nice to see family as well. 🙂
