Ingredients: - CREAM TOGETHER:; 1 c AM Canola Oil; 2 c Maple syrup; 1 1/2 ts Vanilla MIX TILL SMOOTH:; 2 c AM Unbleached White Flour; 3/8 c AM Soy Flour; 1/2 c Cold water; 1/2 c Soy milk; 1 1/2 ts Grated lemon rind; 1 1/2 ts Sea salt (optional); 3 Egg whites; 2 ts Cinnamon; 2 ts Non-alum baking powder MIX THE ABOVE 2 MIXTURES TOGETHER AND ADD:; 1 c Cooked AM 7 Grain Cereal; 5 c AM rolled Oats; 1/2 c Raisins (optional); 1/2 c Chopped nuts

INSTRUCTIONS

Mix well and fill oiled cake pan 3/4 full.  Bake 350 F. until light golden
brown.  This is not a very sweet cake.  May be served with apple butter,
honey, etc.
