A Zingy Colourful Coleslaw

INGREDIENTS

1/2 sm White cabbage; shredded
Few leaves red radicchio lettuce
1 sm Red onion
1 sm White onion
1 Yellow pepper; roasted
1 Orange pepper; roasted
2 Dsp honey
2 Dsp lime juice
1/4 ts Mustard
Salt and pepper

INSTRUCTIONS

DRESSING
To prepare the vegetables for the coleslaw, slice the cabbage very
finely along with the red and white onions. Tear the red lettuce into
small pieces and mix with the other ingredients. Prepare the peppers
by cutting into strips, removing the seeds and grilling for 2 minutes
on either side. This improves and sweetens the flavour of the peppers.
Prepare the dressing, by mixing together the honey, lime juice, salt,
pepper and mustard until smooth and well blended. Pour over the salad
ingredients, toss well, then serve.
