INSTRUCTIONS

Make pudding according to package directions in bowl. Stir in lemon zest,
lemon juice and coconut extract. Reserve 1/4 cup pudding for topping. Spoon
remaining pudding equally into dessert bowls. Combine remaining ingredients
in bowl. Spoon on top of pudding. Top with reserved pudding. Makes 4
servings.
