INSTRUCTIONS
Peel, core and cut apples into 1/4 inch thick slices (to make about 4
cups.) In 9 x 13 pan, melt butter in oven at 375 deg. Arrange apple slices
over melted butter in dish. Continue baking until apples are soft, about 10
minutes. In small bowl, mix brown sugar with 1/2 teaspoon of the cinnamon
and nutmeg. Remove pan from oven; sprinkle apple with sugar mixture; set
aside. In blender or food processor fitted with a metal blade, blend eggs,
milk, flour, sugar, vanilla, salt an remaining 1/2 teaspoon cinnamon. Blend
until smooth, about 30 seconds. Pour over apples in baking pan. Return pan
to oven; bake at 375 deg 35 minutes, or until top is golden brown and
apples rise to surface. Remove from oven and sprinkle with powdered sugar.
Serve warm.
Makes 8 servings.
