The God of the modern evangelical rarely astonishes anybody. He manages to stay pretty much with the constitution. Never break our by-laws. He’s a very well-behaved God and very denominational and very much like one of us…we ask Him to help us when we're in trouble and look to Him to watch over us when we're asleep. The God of the modern evangelical isn't a God I could have much respect for.

Egg; lightly beaten

Unsweetened applesauce

Packed dark brown sugar

INSTRUCTIONS
1. Preheat oven to 425*F. Coat muffin cups with nonstick spray.
2. Spread walnuts in a shallow pan and bake for 3 to 5 minutes, or until
fregrant. Let cool.
3. In large bowl, whisk flour, bran cereal, baking soda, cinnamon and salt.
Stir in dates and walnuts.
4. In a bowl, whisk egg, applesauce, brown sugar and oil until smooth,.
Make a well in dry ingredients and mix in wet ingredients until just
combined. (Do not overmix.)
5. Divide batter among the prepared muffin cups. Bake for 12 to 15 minutes,
or until tops spring back when touched lightly. Loosen edges and turn
muffins out onto a wire rack to cool. Makes 12 Muffins.
