Name: Artichoke Casserole
Ingredients: 1 cn (14-oz) artichoke hearts; drained and quartered; 1 lb Longhorn or Rat cheese; grated; 6 Eggs; beaten

INSTRUCTIONS

Place artichokes on the bottom of a greased 8x8 pan. Top with cheese. Pour
beaten eggs over cheese. Bake at 350&deg; for 45 minutes.  Yield: 6 to 8
servings.
