You see, when it comes to the birth of Christ, it’s hard to find anything to brag about other than the birth of Christ! Stinky stable (and not a warm hospital), wooden manger (and not a beautiful crib), insignificant parents (and not reputable people), notorious town (and not the religious city of Jerusalem), dangerous journey (and not a bed for Mary), Roman dictatorship (and not servant leadership), swaddling cloths (and not fresh linens). It is mostly bad so that we might not miss the good.

Olive oil

Minced onion

Cloves garlic; minced (2 to 3)

Eggs

Artichoke hearts; (1 oz.) drained, trimmed, and chopped (1 to 14)

Dry bread crumbs
1/2
lb
Swiss or sharp Cheddar cheese

Dry or 2 Tb. fresh minced parsley

ts
Oregano
1/2
ts
Salt
Pepper to taste; and/or dash Tabasco
INSTRUCTIONS
Heat oil in skillet, and saute onion and garlic until soft and translucent
but not brown.
Beat eggs in bowl; add chopped artichoke hearts. Stir in rest of
ingredients. Pour into 7 x 11 baking dish. Bake 25-30 min. at 325 degrees F
until set.
Let cool before cutting into squares.
