Baked Spinach Egg "Nests"

Canadian bacon

Fresh spinach leaves – approximately
4
ts
Butter
8
Eggs
Salt & pepper to taste

Shredded cheddar cheese
INSTRUCTIONS
Wash, dry, and remove stems from spinach. Stack leaves and roll up tightly,
then slice in narrow strips. Put 1 teaspoon butter in each of 4-4oz baking
cups. Add about 1/4 of the spinach, then about 1/4 of the bacon. Break 2
eggs on top of each nest, then top each egg with 1 teaspoon cheese. Place
baking dishes on a cookie sheet and bake in a preheated 325 oven for
approximately 15-20 minutes.
