INSTRUCTIONS
Dust a medium bowl with powdered sugar, add flour, sugar, baking
powder, salt, nutmeg and cinnamon and stir well. In a small bowl,
beat together milk, egg and vanilla until well blended. Stir egg
mixture in with flour mixture. Stir until smooth. In a deep skillet
with 2 inches of hot oil (375 degrees). Use tongs to dip pieces of
banana into batter to coat. Fry banana until golden brown, turning to
brown all sides. Remove beignets and drain on paper towels. In a bowl
with powdered sugar, roll each beignet to coat. Serve warm.
Approximately 7 minutes.
