Ingredients: 4 lb Cooked yams; 1/2 c Butter; melted; 3 Eggs; slightly beaten; 2/3 c Orange juice; 1/3 c Brown sugar; packed; 1/4 c Brandy; 1 tb Grated lemon peel; 1 ts Cinnamon; 1/2 ts Salt

INGREDIENTS

4	lb	Cooked yams
1/2	c	Butter; melted
3		Eggs; slightly beaten
2/3	c	Orange juice
1/3	c	Brown sugar; packed
1/4	c	Brandy
1	tb	Grated lemon peel
1	ts	Cinnamon
1/2	ts	Salt

INSTRUCTIONS

Beat cooked yams with electric mixer, adding melted butter - add remaining
ingredients and beat until smooth - butter a 2 quart casserole and spoon in
the mixture - bake at 350 degrees for 45 minutes or until set. MC
