Ingredients: 2 lb Ricotta cheese; 2 c Mozzarella cheese; grated; 1 c Parmasean cheese; grated; 2 Large egg yolks; 1 1/2 tb Fresh garlic; minced; 1 tb Dry oregano; 1 tb Dry basil; To Taste kosher salt; To Taste black pepper

***add 20 ounces of frozen spinach, well wrung out.
***add 1 cup finely chopped proscuitto
***add 1/2 cup chopped, cooked pancetta or hot ham
*** substitute different herbs
