INSTRUCTIONS
For the pastry: Preheat the oven to 200 C, 400 F, Gas Mark 6. Sieve the flour with a pinch of salt. Rub the lard and margarine into the flour until it resembles breadcrumbs. Add the water until it forms a ball of pastry. Roll out the pastry, large enough to line an 20cm (8inch) flan ring. Lay a piece of foil on top of the pastry inside the flan ring and bake in the oven for 15 minutes. Remove the foil from the pastry and return to the oven for a further 5 minutes. For the filling: Heat the oil in a pan and gently cook onion until it is softened. Break the eggs into a bowl, add nutmeg and coriander then season to taste. Add the onions and pour into the flan. Arrange the battered onion rings on top and bake in the oven for 40-50 minutes or until it is firm to touch. Converted by MC_Buster.
