Eggs Brownie 1 Batch

INGREDIENTS

1 c All-purpose flour
1/2 c Plus 1 tablespoon
unsweetened cocoa
1/4 t Salt
1/4 t Baking powder
5 T Butter
1 1/4 c Sugar
1 Egg
2 Egg whites
1 t Vanilla extract
1 t Espresso in 1 teaspoon of
water

INSTRUCTIONS

Preheat the oven to 350 degrees. Spray 8-inch square pan w/ vegetable
oil. Stir together the first 4 ingrdients and set them aside. Melt
butter in saucepan. Stir in the sugar, add the egg, egg whites,
vanilla and espresso. Beat w/ wooden spoon until well combined.  Scrape
mixture into prepared pan. Bake 20-25 minutes.  Yield: 1 batch
