INGREDIENTS
1/2 | c | Lean ham, cubed |
1 | c | Lowfat chicken broth |
1 | Onion, chopped | |
3 | Stalks celery, chopped | |
2 | Carrots, chopped | |
8 | c | Vegetable broth |
1/4 | t | Cumin, more to taste |
1/4 | t | Coriander, more to taste |
1/2 | t | Hot pepper sauce, more to |
taste | ||
1/2 | c | Vegetable juice cocktail |
1/4 | c | Lime juice, or lemon juice |
1/3 | c | Wild rice |
2/3 | c | Long-grain brown rice |
INSTRUCTIONS
saute the veggies in the cup chicken broth til soft in a pressure cooker. Toss all remaining ingredients in the pot stir lock lid in place bring up to high pressure level out and cook for 12 min.
