Why name joy the gift in trials? Because trials keep us from becoming complacent about our loving God and Savior when we are forced to our knees and the tears won’t stop. It is only then that our communion with our God is the purest. Trials drive us to run boldly to the throne of grace, to the safety of being on our faces in the presence of God, and to spend time in deep communion with God. When we are hurting, we don’t suffer as much from weak, shallow, and meaningless minutes with the Lord, We learn to relish and anticipate hours with God! The experience of communion and intimate fellowship with God is the very depiction of joy!

Onions; thinly sliced

Thyme sprigs

Garlic cloves; minced

Butternut squash; cut in 1/2-inch cubes

Sage leaves; chopped, OR

Parsley; chopped
Salt and pepper to taste

Gruyere cheese; grated

Whole milk, PLUS 2 TBS

Bread crumbs, fresh
INSTRUCTIONS
Preheat oven to 350 degrees. Lightly oil or butter a gratin dish.
Warm half the oil in askillet, add onions and thyme and cook over
medium0high heat. Stir frequently, until onions are lightly caramelized,
about 12 to 15 minutes. Add half the garlic, season withsalt andpepper and
cook 3 minutes more.
Dredge squash in flour. Heat remaining oil in large pan, add squash and
saute until it begins to brown, about 7 minutes. Add sage and parsley,
season with salt and plenty of pepper; cook another minute or so.
Spread onion mixture on bottom of dish; add squash and cheese. Pour in
milk and cover with bread crumbs.
Cover and bake 25 minutes; remove cover and bake another 25 minutes, until
top is browned. Serves 4.
