In a saucepan over medium-high heat, bring the orange juice and water to a
boil. Stir in the couscous and oil. Remove from the heat. Cover, let stand
for 30 minutes. In a large bowl, toss the couscous with the oranges, kiwi
fruit, lime juice, mint and pine nuts. Serve immediately or chill until
ready to serve. Servings: 4
Per serving: 237 calories, 6.8 g fat, (24% of calories), 0 mg cholesterol,
9 mg sodium, 7 g dietary fiber.
NOTE: I prefer this well chilled. If I don't have pine nuts, I substitute
walnuts or pecans.
